Cubicles Suck... A Makeover

So it's been a hectic and emotional week. I am finally starting to feel myself again after an emotional job change. Change is good but I often fear it.

I arrived to my new job on Monday to see this.



This may look normal to some people but for me this is about as depressing as it gets. I am someone who is very effected by my environment, i love the outdoors and I also need windows and natural light.

So needless to say when you drive an hour to get to work ... You need a place to welcome and inspire you and this wasn't working for me so...

I decided I could cry about it or I could change it.

First Day of Fall - Pumpkin chocolate chip muffins

I am so happy to have Fall roll in. There's a beautiful crisp chill in the air gives me a whole new energy. I have been going through a lot of changes lately and it's perfect timing because when God sends Fall he sends his tangible reminder that things are supposed to change. I happily welcome it with open arms and very little anxiety ;).

Here are my favorite Fall muffins. I probably crank out a couple dozen of these a week they become a staple in our house during the Fall and the best part is they are easy! No mixer required.


They are so good!


Here's the recipe.


The good stuff. Go ahead a get a couple cans of pumpkin because you will make them more than once!


Mix dry ingredients. I prefer wheat flour makes them more grainy and goes with the pumpkin really well.


Now it calls for pumpkin spice that I used to be able to find at Albertsons but we went everywhere and couldn't find it. So pumpkin pie spice is ok too but if you can find pumpkin spice it is better. I plan to search the metroplex looking for it soon.


Mix wet ingredients. Don't be stingy with the pumpkin!!


Mix wet and dry ingredients.



Add chocolate chips ...it says 6 ounces but a little more never hurt anyone. I have tried both milk chocolate and semi sweet...I prefer semi sweet but the are both good!


Spray your pan it will make 12


Fill them up good right below the rim.

Bake for 22-25 min and your done.


Let cool!


Yummy




They won't last...


Serve with coffee and a blanket :)

Slow and Steady Fall Wardrobe

I have a hard time deciding on clothes and I don't do much shopping I am more of a recycler. I am short and curvy so things are hard to fit my body. But I think all women have this problem, women's sizing is terrible and never consistent. I also feel guilty when I spend money on clothes even though Super Man encourages me to. So in an effort to improve my wardrobe and add quality not quantity while keeping a budget I am going to order a few pieces and keep it under $100 each paycheck. Here are my first few pieces...

Navy blazer ...I love the piping and I think it will be very neutral. I usually like this cut as well a little shorter in length.


Sheath dress with leather accent. Mine is actually all grey minus the red but they are both cute!

Booties ....I LOVE LOVE these and hope they are as cute on!!! They also come in a beautiful camel brown.

I will let you know how they work out I am not a huge online shopper but I am working on it ;)

Caramel Apple Fantans

Sorry I was MIA last week, things have been a little crazy in my work world and I had a small surgery that turned out to be a bigger deal than anticipated. However, I am thankful for the time to rest and for my health. Now, there has been just a little bit cooler weather in the mornings so I am of course thinking of Fall and getting an itch to transition to a new season. Here is a Fall inspired recipe from Southern Living and requested by Super Man.

Caramel Apple Fantans


Here's the recipe 


Start by making your dough 



Mix in eggs


Next few ingredients


Wheat flour...I love this stuff


Mix


Time to knead


For a good 6 to 8 min



Then lightly spray a bowl so it can rise



Next get the filling ready




Chop the apples


Sauté filling




Next assemble... I enjoyed the pictures showing how to... cause this could be tricky.




Add a little butter





Starting to smell good


Mix sugar and cinnamon and sprinkle on the goodness.




Next start to cut and layer






Seriously?! At this point Super Man is doing the food dance around the kitchen.


Load into tins



Time to go in the oven


All done


While they cool... cook the caramel glaze

Yummo! Superman loved them and they called for pecans but I was out so I am sure that would be a great addition.
